Loaded up with flax seeds and dried currants for a delicious bread. This bread is mixed with a lot of water that makes for a very slack dough so it can&#8217;t be weighed out and shaped like other bread, it is just cut into pieces. A really flavorful artisan loaf &#8211; $5\/piece<\/em><\/p>\n<p><strong>Buckwheat Rye &#8211;<\/strong> <em>Fresh milled buckwheat and rye are soaked for 8 hours without any yeast in a method known as an<a href=\"https:\/\/www.bakerybits.co.uk\/resources\/autolyse-what-why-how\/\"> autolyse.<\/a> As buckwheat and rye don&#8217;t have much gluten this allows what little gluten there is to start developing and really gets the enzymes going before the final mix. This soaker is mixed with bread flour, salt and yeast and a bit of honey. Would go well with all sorts of meats and cheese &#8211; $5\/loaf<\/em><\/p>\n<p><em>and pastry this week&#8230;<\/em><\/p>\n<p><strong>Bear Claws! &#8211;<\/strong><em> Made with a danish pastry dough rich in cream, eggs, sugar and butter. The dough is rolled out and spread with a filing made with almond paste, powdered sugar, egg whites and just a bit of cinnamon to round out the flavor. Then, because bears love honey, topped with a honey glaze after baking. As always, quantities are limited, be sure to get your order in before you miss out- 2\/$5<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #800000;\"><strong>January Hours<\/strong><\/span><\/p>\n<p><a href=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:auto\/h:auto\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2014\/02\/dscn0449.jpg\"><img data-opt-id=1882705287  fetchpriority=\"high\" decoding=\"async\" style=\"float: left; margin-right: 10px;\" src=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:300\/h:225\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2014\/02\/dscn0449.jpg\" alt=\"\" width=\"300\" height=\"225\" \/><\/a> We will be around through January, and so will our Baker, but for <em>Abbreviated Hours!<\/em><\/p>\n<p>Therefore take Note: our present intention is to be open Fridays from 4-6pm and Saturdays from 3-6 pm through January.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #800000;\"><strong>Speaking of Bear Claws&#8230; <\/strong><\/span><\/p>\n<p><a href=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:auto\/h:auto\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2018\/01\/tator_ulee_couch.jpg\"><img data-opt-id=520500819  data-opt-src=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:274\/h:300\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2018\/01\/tator_ulee_couch.jpg\"  decoding=\"async\" style=\"float: left; margin-right: 10px;\" src=\"data:image/svg+xml,%3Csvg%20viewBox%3D%220%200%20274%20300%22%20width%3D%22274%22%20height%3D%22300%22%20xmlns%3D%22http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%22%3E%3Crect%20width%3D%22274%22%20height%3D%22300%22%20fill%3D%22transparent%22%2F%3E%3C%2Fsvg%3E\" alt=\"\" width=\"274\" height=\"300\" \/><\/a> Ulee had his First Birthday on Christmas Eve. If we <em>Bear<\/em> in mind that most breeders have to come up with maybe a <em>hundred<\/em> new <em>puppy names every year,<\/em> it&#8217;s not surprising that these pups all got Holiday names. His was <em>&#8220;Yuletide.&#8221;<\/em> When we brought him home we shortened it to Ulee, which is most commonly a nickname for &#8220;Ulysses.&#8221;<\/p>\n<p>Ulee is officially a Mini-Australian Shepherd, which basically means that his lineage conforms to AKC standards for an &#8220;Australian Shepherd,&#8221; though they are deliberately bred smaller, around 30 lbs. on average. They are very popular pets, being easier to manage than their 55# progenitors, but still intelligent, industrious, attractive, loyal, and attentive. And as in this photo, unlike many dogs, they will Look you In the Eye. The Mini Aussie is derived from selective breeding of smaller Standard Aussies.<\/p>\n<p>Our dear boy<a href=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:auto\/h:auto\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2016\/12\/20161222-152339.jpg\"> Cooper<\/a> <em>(Best Dog Ever!) <\/em>was also a Mini-Aussie, who weighed in at about 32 lbs. Coincidentally, this is the <em>same<\/em> weight as our older Aussie, Tator, who is a Working Dog from the\u00a0 somewhat different genetic lineage of Herding Aussies, which conform to <a href=\"http:\/\/www.asca.org\/conformation\/breed-standard\/\">ASCA<\/a> standards. These dogs are longer, lighter-boned, more agile, and a bit, well&#8230;<em>over-focused<\/em>. Though Tator and Cooper <em>weighed<\/em> the same, Tator was<em> taller, longer, and faster.<\/em> The point here is that we expected <em>Ulee<\/em> to be about the same size and weight as <em>Coopie.<\/em> We haven&#8217;t weighed him for a while, but he is taller, longer, wider and heavier than Tator,\u00a0<em> probably 45 lbs or so<\/em> at present. His head is noticeably broader and shorter than most Aussies, and his behavior is boisterous, physical, chewing-fixated, and Enthusiastic.You know&#8230;<em>Bear-like!<\/em><\/p>\n<p>So, a week or two ago we Realized What had Gone Wrong. Above left is a photo of Tator <em>(left)<\/em> and Ulee <em>(right&#8211; with the &#8220;cigar&#8221;). <\/em><a href=\"http:\/\/www.asca.org\/conformation\/breed-standard\/\">Here<\/a> are a bunch of typical Aussie photos.\u00a0 Ulee&#8217;s coloring is <em>definitely Aussie-like, <\/em>but his Shape is not. So he has been a Dog of Mystery until our Recent Insight: we are currently convinced by a year of Close Observation that the only Explanation that Makes Sense is that Ulee&#8217;s Ancestry <em>has<\/em> to include some creature like <a href=\"http:\/\/wsny-fm.sagacom.com\/wp-content\/blogs.dir\/16\/files\/2017\/04\/Polar-Bear-Cubs-0311-Grahm-S.-Jones-Columbus-Zoo-and-Aquarium.jpg\">this!<\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #800000;\">Mar a Lago Update: is the Button So Big&#8230;or My Hands So Small&#8230;?!<\/span><br \/>\n<\/strong><\/p>\n<p><img data-opt-id=1642937731  data-opt-src=\"https:\/\/mlpxrtka7dnn.i.optimole.com\/w:300\/h:294\/q:mauto\/ig:avif\/http:\/\/artisanwineclub.com\/index\/wp-content\/uploads\/2017\/01\/IMG_20160719_143417564_HDR-e1484277470561.jpg\"  decoding=\"async\" style=\"float: left; margin-right: 10px;\" src=\"data:image/svg+xml,%3Csvg%20viewBox%3D%220%200%20300%20294%22%20width%3D%22300%22%20height%3D%22294%22%20xmlns%3D%22http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%22%3E%3Crect%20width%3D%22300%22%20height%3D%22294%22%20fill%3D%22transparent%22%2F%3E%3C%2Fsvg%3E\" width=\"300\" height=\"294\" \/><\/p>\n<p>First, of course, there isn&#8217;t any &#8220;Button.&#8221; Except maybe in the Satirical View of <a href=\"http:\/\/blog.nuclearsecrecy.com\/2014\/12\/15\/button-isnt\/\">The Onion<\/a>. So the Good News is that a Single Madman <em>(you know who I mean)<\/em> can&#8217;t Launch the Whole Arsenal Singlehandedly. It is Less Clear <em>how small<\/em> a number of Strategically Placed Madmen <em>could<\/em> launch Enough of the Arsenal to render the question Moot. And to be Frank, there seems to be No Shortage of Madmen in Positions of Power Around the World at the moment. At some point we might want to take a look at that, huh&#8230;?<\/p>\n<p>Comfortingly, thanks to <em>Dr. Strangelove, Fail-Safe,<\/em> <em>Seven Days in May, <\/em>and their ilk, a Lot of Very Smart People <em>have<\/em> thought about Accidental Armageddon for a Long Time, and we all hope this is a Case where the Military Philosophy of <em>&#8220;Two Backups for Every Alternate System&#8221;<\/em> is In Place, Active, and Foolproof. You know, <em>&#8220;more or less,&#8221;<\/em> anyway. All should be Well as long as we avoid basic Economic questions like<em> &#8220;um, could you remind me again how we computed the Optimal Number of Nukes to Launch under the Present Scenario&#8230;???&#8221;<br \/>\n<\/em><\/p>\n<p>There is not a Lot of Difference between what the Republican-controlled White House, Senate, and House are doing to America and what ISIS has done to Syria, Afghanistan, and Iraq.
