Pat on our handmade truffles
“okay, it’s not pretty…but it IS delicious!”
“Janice and I have been making truffles for sale at the wine shop for about 3 years now. We generally make 4 flavors and usually have them very fresh for Thanksgiving, Christmas, Valentine’s Day, and occasionally through the year when the whim strikes us.
“We make ganache centers… chocolate (dark, milk, or white) and cream. The flavorings we use are the real thing; vanilla from the bean itself, true liqueurs, and organic whenever possible. Then we hand dip them in dark tempered chocolate that gives a snappy covering around the creamy center. We use only the best chocolate–yeah, we’re chocolate snobs! The dark chocolate we are currently using is Vahlrona (French) at 72% cocoa content. The milk chocolate is also Vahlrona at 42% cocoa (a high % compared to most milk chocolate) and the white is a Spanish chocolate (El Rey) with 32% cocoa butter content–this is delicious even for those of us who aren’t wild about white chocolate.”
The flavors for Christmas 2011 offering are:
- Chipotle Chile and Cinnamon: dipped in delectable dark chocolate
- Fleur de Sel Caramel: perhaps the all-time classic favorite, dipped in dark chocolate and sprinkled with sea salt
- Toasted Coconut: white chocolate & coconut milk centers, dipped in dark chocolate and rolled in toasted coconut
- Triple chocolate: milk and white chocolate centers, dipped in dark chocolate
We package them in boxes of 4–one of each flavor–labeled inside and tied outside with raffia. The price is $5 for the gift box of four. For those who don’t need gift packaging, we also fill bulk orders. Bulk orders are $1 per truffle (plus $1 packaging for the whole order).
We usually make only enough to fill pre-orders. Because we do this for the love of chocolate we make only enough to sell at their freshest; they’ll keep for a few weeks, but are really primo within a week to ten days of being made.
